Journey of Wellness Calgary restaurants

It was a beautiful day and I finally had a day off.  It had been a while since we last visited this wonderful little restaurant.

Charcuterie: Boar and Foie Gras Terrine paired with Apple Slices and Cave Aged Gruyere paired with a Tomato Chili Jam

Terrine had great flavour and pairs well with apple.  It reminded me of a luxurious piece of spam (I love my spam!).  Gruyere was delicious and sharp.  The sweet and spiciness from the jam helps balance it out.  All the components on their own were fantastic and when you bring them together, t'was just so wonderful.  The soft bread really complemented the Charcuterie.

I was being adventurous and put every component on.  So good.

Chip Buddy- Special of the day!  Burger bun with compound butter of garlic and bacon, tomato ketchup, fries, back bacon and a fried egg on top.... and some salad to make you feel better about yourself ;)

There were so many components and they came together oh so very well.  The flavour was great and surprisingly it wasn't very greasy, so John did not feel bad after eating it.  The salad was fresh and lightly dressed so it was a nice way of balancing out the plate.

Farm Hash- fried eggs, aged cheddar, FARM breakfast sausage, local potatoes, onions, fresh herbs, creme fraiche

There was a perfect amount of everything where nothing overpowered the other.  The flavours created a spectacular symphony in my mouth.  The fried eggs were more like sunnyside eggs which I absolutely loved and the broken yolk over the has just added more to it... LOVED the cheese.

Behind this lovely restaurant is a lovely Cheese shop!  Janice Beaton Fine Cheese.  There was so much to see!!!!

We decided on the Vintage 3 Year Gouda and an Applewood Smoked Cheddar.

Along with the cheese, we got some Pear Vanilla Jam and Pork Brandy Green Peppercorn Terrine!

On bread, the jam and cheese... magnifique!

Enjoy!
